Chickadee Posted November 28, 2009 Share Posted November 28, 2009 Glowing Carrot Salad Glowing Carrot Salad ½ cup salad oil ½ cup sugar 2/3 cup vinegar 1 tsp. prepared mustard 1 tsp. salt ½ tsp. pepper 2 tsp. Worcestershire sauce 5 cups sliced carrots (angled looks good) 1 medium onion, sliced or chopped 1 small green pepper, chopped 1 celery heart, trimmed, cut in round slices 1 10½ oz. can tomato soup Cook carrots in a small amount of salted water just until tender-crisp. Drain. Add onions, green pepper and celery. Combine well. Combine remaining ingredients and mix well. Pour over vegetables. Cover and refrigerate overnight. Serve hot or cold. PS: Celery hearts are not always available so use any part of the celery stalks. Making very thin slices of celery, onion and green peppers is optimal, but as seen from the photo, any size is OK.
