Mediterranean Herbed Pork Roast

1pound boneless pork roast
1tablespoon oil
1tablespoon kosher salt
3tablespoon of freshly cracked pepper
1garlic cloves, finely chopped
1onion, roughly chopped
2cup of water
2sprigs fresh thyme
1sprigs fresh oregano
1sprig fresh rosemary




1. Preheat the oven to 350F. Rub all sides of the pork roast with the salt and pepper.

2. On the stovetop heat the olive oil in a heavy bottomed stockpot and sear the pork roast on each side for about four minutes, or until each one is golden brown.

3. Add in the garlic cloves and onion. Pour in the water, thyme and oregano and bring to a boil for a minute. Cover tightly and roast in the oven to 1 to 1 ½ hours.

Once the pork roast is done allow it to cool, slice and serve!
