Spanish Paella

Forget what you think you know about paella (Pah-YAY-ya). Yes, it is the national dish of Spain, but it does not always include seafood, and it is not hard to make at home. In fact, it is easier to cook on the grill than it is indoors. There are so many opportunities to create deep flavors in this dish, but always remember the three foundational elements: good paella rice, richly flavored stock, and sofrito (saute) of onions and tomatoes. Good-quality saffron helps, too. Here’s our how-to.
