Draggingtree Posted September 18, 2013 Share Posted September 18, 2013 Cajun Blackened Fish 1 1/2 lbs catfish, filets 1 tablespoonblack pepper 1 1/2 teaspoonshot paprika 1 1/2 teaspoonssweet paprika 1/2 teaspooncayenne 1 1/2 teaspoonsgarlic powder 1 1/2 teaspoonsonion powder 1 1/2 teaspoons ground thyme 1 1/2 teaspoonsfile powder 1 1/2 teaspoonsmustard powder Directions:1Mix pepper, hot paprika, sweet paprika, cayenne, garlic powder, onion powder, ground thyme, file powder, and mustard powder together in a small bowl to create the Cajun Blackening Mix. 2Pour the Cajun spice mix on a tray. 3Press the fish into the Cajun spice mix on both sides. 4Fry in a hot cast iron pan coated with oil and sear until fish is cooked and spices are blackened. 5Serve with your favorite cajun side dishes. This tilapia recipe is quick and easy to prepare, bakes in as little as 15 minutes, and the mayonnaise mixture gives it an extra burst of flavor. Prep Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes Yield: Serves 4 to 6 Ingredients:1 teaspoon paprika 1/4 teaspoon onion powder 1/4 teaspoon garlic powder 1/4 teaspoon dried leaf thyme 1/4 teaspoon salt 1/8 teaspoon ground black pepper 8 to 10 tilapia fillets, about 3 to 4 ounces each 1 to 2 tablespoons melted butter or butter flavored nonstick cooking spray 1/2 cup mayonnaise, light or regular 3 tablespoons chopped roasted red bell peppers 1/2 teaspoon lemon juice dash garlic powder dash onion powder salt, to taste Preparation:Heat oven to 400°. Line a baking pan with foil and spray with nonstick cooking spray. Combine the paprika, 1/4 teaspoon onion powder, 1/4 teaspoon garlic powder, 1/4 teaspoon thyme, 1/4 teaspoon salt, and pepper. Arrange the tilapia on the baking sheet; drizzle with a little melted butter or spray lightly with butter flavored spray and sprinkle fillets evenly with the spice mixture. Bake for 15 to 20 minutes, until cooked through and fish flakes easily with a fork. Meanwhile, combine the mayonnaise, chopped bell pepper, lemon juice, dashes or onion and garlic powder in a blender. Blend until smooth. Add salt to taste and serve with the fish.
