Slow Cooked Chicken with Black Beans and Steamed Rice


Recipe makes 6 Servings

 1 Tbsp vegetable oil

 4 bone-in chicken breasts

 1 small white onion, chopped

 2 Tbsp tomato paste

 1 cup(s) red bell pepper, chopped

 2 Tbsp garlic, chopped

 1 Tsp ground cumin

 1/2 Tsp kosher salt

 1/2 Tsp black pepper

 1 cup(s) low sodium chicken broth

 1 cup(s) rice, cooked

 15 Oz no salt black beans


1 Heat a large skillet to medium-high. Add oil and chicken breasts. Sear until skin is a nice golden color.

2 Place chicken in a crock pot and add remaining ingredients except rice and beans. Cover and cook on low until meat is tender.

3 Transfer chicken to a cutting board. Carefully remove bones and discard. Shred chicken and return to crock pot.

4 Gently warm beans in a small saucepan

5 Serve chicken over rice and beans.
