Grandma's Rum Almond Coffee Cake

Grandma's Rum Almond Coffee Cake (SaveLiberty)

This recipe is for a 16 cm cake and needs to be doubled for a larger ring (7" or 8"). I recommend weighing the ingredients if possible.

150 grams unsalted butter (this is approximately 1 and 1/3 sticks)

100 grams sugar (this is a little less than 1/2 cup)

1 tsp vanilla

2 eggs

a little salt

a drop almond extract

125 grams unbleached flour (less than 1 cup)

1 tsp baking powder

2 tablespoons rum

50 grams ground almonds (about 1/2 cup)

Cream butter. Gradually add sugar, vanilla, eggs, salt and almond extract.

In another bowl, sift together flour with the baking powder.

Add flour mixture and rum (alternating between the two) to the creamed ingredients. Last, add the almonds.

Pour into a buttered pan (We use a cake ring, which bakes well).

Bake at 300 degrees for 60 to 70 minutes or until toothpick comes out clean.
