Betty's Oven Roast Chicken

I did not use Betty’s receipt tonight, but here’s how I cooked the chicken for my bride.

Layer the bottom of the pan with onion’s then carrots, topped with celery then I

Spiced the chicken with virgin olive oil and lemon pepper cooking at ( cover with loose alum. foil ) 425 f for 30 min. then down to 375 f about 1-30 hrs and removing foil at the end 10 min. to brown. cool.png
