NCTexan Posted August 7, 2013 Share Posted August 7, 2013 I love to work with "striped eggplant" like these below. The meat stays much more firm when cooked.... especially when grilling. Keeps both a great texture and flavor. Strangely, these striped eggplants bear a "Product of The Netherlands" sticker in our local grocery. My Grandma "Ruby" used to make a baked stuffed eggplant with ground beef, Cajun sausage and spices, onions, green peppers, celery and garlic.
