Draggingtree Posted January 24, 2013 Share Posted January 24, 2013 Sugar-fried Chicken 2 to 2-1/2 pounds boneless breast ½ cup canola oil 2 tablespoons brown sugar Make a marinade of: ½ cup catsup ½ cup water 1 small onion 3 cloves garlic, minced 1 tablespoon cumin 1 tablespoon Season All or Old Bay Seasoning 1 teaspoon pepper 1 teaspoon salt Coat chicken in marinade and let stand 15 to 20 minutes. Heat the oil in a heavy skillet. Add brown sugar, stirring until melted. Add chicken and brown on both sides. Add the marinade Plus 2 cups water, bring to a boil, And simmer for 20 minutes or until chicken is cooked through. Serve with Yellow Rice.
