Aunt Maggie’s German Kuchen

 

Kuchen

 

1/3 cup white shortening

 

1 cup sugar

 

1 egg, beaten

 

3 cups all-purpose flour

 

3 teaspoons baking powder

 

1 teaspoon salt

 

1 teaspoon vanilla

 

1 cup milk

 

Fruit for filling, blueberries, sliced and peeled apples or peaches, sliced fresh strawberries, plums, etc.

 

Streusel

 

1 cup flour

 

1 cup sugar

 

1/2 cup softened margarine

 

Kuchen

 

Preheat the oven to 350 degrees.

 

Cream the shortening. Add the sugar gradually. Then add the beaten egg.

 

Sift together the flour, baking powder and salt. Add the vanilla to the milk and add the flour mixture and milk to the egg mixture a little at a time. Beat well.

 

Grease and flour a 15-inch-by-11-inch cookie sheet with sides. Spread the batter thin in the pan.

 

Add the fruit and over the kuchen with the streusel. Bake for 25-30 minutes or until done. Serve warm or cold.

Streusel

 

Mix the flour, sugar and margarine with butter knives until crumbly. Place the streusel on top of the fruit.

Grandma Geldner’s Apple Kuchen

4-5 cups baking apples, Granny Smith

 

1 1/4 cups white flour

 

1 teaspoon baking powder

 

2 teaspoons sugar

 

1/2 teaspoon salt

 

1/2 cup unsalted butter

 

1 egg

 

2 tablespoons milk

 

Topping

 

2 tablespoons unsalted butter

 

3/4 cup sugar

 

1 1 2 tablespoons white flour

 

1 2 teaspoon cinnamon

 

Preheat the oven to 350 degrees.

 

Mix 1 1/4 cup flour, baking powder, 2 teaspoons sugar and salt and sift once.

 

Cut 1/2 cup butter into the dry mixture with a pastry blender to pea size.

 

In a small bowl, beat the egg with 2 tablespoons of milk and add to the dry mixture.

 

Mix thoroughly and pat dough into a greased or oiled 9-inch-by-13-inch baking dish.

 

Pare and core the apples. Cut the apples into thin wedge slices and place on the dough in rows until covered by covering the thin end of one apple with the thick end of the other.

 

Dot the apples with 2 tablespoons of butter and mix 3/4 cup of sugar, 1 1/2 tablespoons of flour and cinnamon together.

 

Spread the dry topping over the dotted apples and bake in the oven for 30-45 minutes or until golden brown.
