Pasta with beans (pasta e fagioli)

Ingredients

Number of parts:two

½ kg. Of white beans.


½ Cup of oil .


01 Cup of onion , finely grated.


02 cloves garlic , machados.


½ Red paprika, without veins and without seeds, crushed in 03 tablespoons of water.


10 cups of beef broth without salt or water.


¼ Teaspoon of pepper , ground.


04 Spanish type chorizofrom Extremadura, about 250 grams or the same amount of Italian sausage.


3 ½ Teaspoons of salt.


250 grs. Of small paste for soup,


15 Drops of hot sauce.


02 tablespoons parsley, minced

Preparation

·        The beans are chosen and, the night before or eight (08) hours in advance, they are put to soak in enough water to cover them. They drain.

·        In a heavy pot put the oil to heat. Add the onion and garlic and cook for about 5 minutes. The paprika is added and cooked for another four (04) minutes.

·        The beans are added to the pot, stir and add the consommé or water and pepper. It is stirred.

·        Bring to a boil and, over medium heat, cook for a few minutes. Sausages are added, without the skin and cut, on thin wheels, and cooked for another 15 minutes.

·        Salt and pasta are added. Continue cooking until the pasta is al dente, about 10 minutes.

·        Add the hot sauce and about 4 or 6 tablespoons of the crushed beans with 1 cup of the soup liquid, to thicken the broth, cook for 5 minutes more and remove from the heat. It is garnished with chopped parsley.
