Chickadee Posted December 1, 2009 Share Posted December 1, 2009 Roast Delicata Squash Delicata Squash (also called Bohemian or Sweet Potato Squash) 1. Preheat the oven to 375°F. 2. Cut the squash in half lengthwise 3. Scoop seeds out with a spoon. Discard seeds. 4. Salt squash (and pepper, if desired) 5. Place squash halves face down on a cooking spray-coated cookie/baking sheet 6. Bake for about 30 minutes While squash is baking, in a bowl combine butter, finely chopped pecans and brown sugar. Press this mixture on plastic wrap into a small tube shape and put into freezer. After squash is baked and somewhat cooled, take butter-pecan tube out of freezer and cut into squash-sized sections. Put the sections into the hollow of the squash. Before serving, return squash to the oven to slightly melt butter/pecan/brown sugar mixture.
