FRUITED ACORN SQUASH

 

2 Medium Acorn Squash

1 1/2 cups whole cranberry sauce

2 medium apples, peeled, cored, and chopped fine

1/2 cup raisins

 

Wash the two acorn squash and set on cookie sheet. Cook whole in 350F oven for 20 minutes. Remove from oven and let cool enough to handle. Remove the stem if there is one and cut each squash in half lengthwise (from stem to stern). Scoop out the seeds. Lay each half on a cookie sheet with the rind side down.

 

Combine the cranberry sauce, apples and raisins. Fill the squash cavities with the mixture. Fill

the squash cavities with the mixture. Cover loosely with aluminum foil and bake in a preheated oven 350F for 45 minutes.
