Vegetarian Meatloaf


2 cups dry lentils

1 bay leaf

8 cups water

1 cup uncooked fine bulgur

1 cup soft breadcrumbs

1 egg, beaten

1 Tbsp ketchup

1 medium onion, chopped

1 clove garlic, crushed

1 tsp thyme, crushed

2 tsps oregano, crushed

1 tsp tarragon, crushed (optional)

Salt and Pepper to taste

Additional ketchup for top



Combine the lentils and bay leaf with six cups of the water in large pot.

Bring to a boil, then turn down to simmer, cover and cook the lentils until

they are soft and the water has been absorbed, about 45 minutes.


Combine the bulgar and the other two cups of water in a medium saucepan. Bring

to a boil, lower the heat, cover and simmer for about 15 minutes.


In a large mixing bowl, combine the lentils and bulgar and remaining ingredients.


Pat into a bread pan loaf. Brush more ketchup over the top. Bake until firm, but not dry, about 40 minutes. Let stand 10 minutes before slicing. Serves 6

Looks marvelous, [Geee]. I make one similar--which I love. Thanks for posting. I will certainly try it.

 

I'm sure you have one for chili too. I posted one today that sounded intriguing. Maybe it would give you some new ideassmile.png
