Draggingtree Posted February 18, 2013 Share Posted February 18, 2013 Dinner Special Meatloaf 1 lb. lean ground beef ½ cup Kraft Original Barbecue Sauce ½ cup dry bread crumbs 1 egg, lightly beaten 1 ¼ cups water ¾ cup milk 2 Tbsp. butter or margarine ½ tsp. salt 1 ½ cups instant potato flakes 3 oz. Philadelphia Cream Cheese, cubed 2 Kraft Singles a) Preaheat oven to 374 F. Mix meat, barbecue sauce, bread crumbs and egg. Shape into loaf in 12x8-inch baking dish. Bake 55 minutes. Meanwhile, bring water to boil in medium saucepan. Add milk, butter and salt; stir in potato flakes. Add cream cheese; stir until completely melted. c) Spread potato mixture over meatloaf; top with Singles, Bake an additional 5 minutes or until Singles begin to melt. Draggingtree Posted August 20, 2015 Author Share Posted August 20, 2015 Mom's Best Meatloaf (Serves two with leftovers for a sandwich)2 teaspoons bacon fat2 Tablespoons chopped onion1 heaping teaspoon minced jarred garlic (or one clove roasted if you're adventuresome)3/4 tsp salt3/4 tsp peppera pinch of crushed red pepper3/4 teaspoon Italian seasoning1 pound ground beef (don't get the cheap burger for this, you'll lose a lot of it to fat)1 and 1/2 large slices of bread toasted and crumbled (or about 1/3 cup crumbs)5 buttery crackers (like Ritz or Waverly Wafers) crushed1 small egg1/4 cup tomato sauce1 Tablespoon plus 1 teaspoon Worcestershire sauce2 Tablespoons maple syrup1 Tablespoons plus 1 teaspoon mayonnaise or sour creamSaute onion and garlic in bacon fat (or butter) until lightly golden. Mix everything together, just until mixed, do not overwork. Top with about 1/3 cup barbecue sauce. Put into bread pan (it should be sized so that there is an inch or two at each end of the pan open, otherwise it will be too thin).Bake at 350 F for 35-40 minutes. (meat thermometer at 160 F.)
