Draggingtree Posted September 15, 2012 Share Posted September 15, 2012 Title Lemony Pasta Description Ingredients 9 oz. spaghetti Juice and zest of 4 lemons 2/3 cup olive oil 1 1/2 cup Parmesan cheese, freshly grated 1 tsp. hot pepper flakes Salt and pepper, to taste 2 handfuls fresh basil, thinly sliced 1 handful fresh mint, thinly sliced Directions Cook spaghetti in a generous amount of salted boiling water, then drain. While pasta is cooking, beat the lemon juice with the olive oil, then stir in the Parmesan until thick and creamy. The cheese will melt in the mixture. Season with pepper flakes, salt and pepper, then add more lemon juice to taste. Add the sauce to the spaghetti. Toss with the lemon zest, fresh basil and mint and serve. Serves 2.
