righteousmomma Posted July 14, 2012 Share Posted July 14, 2012 We like Carnitas. The only recommendation I would make is to use plenty of seasonings because it can taste rather porky otherwise. I personally find that part objectionable but others do not. I like them best cooked from a smoked bbq (Big Green Egg) Boston Butt until pull a part tender. ("pulled pork") Then made into the Carnitas. NCT will mix the shredded pieces in a skillet with some Paces Chunky Salsa and a little apple juice. Best way is to make them into tacos. Either soft (more traditional carnitas) or crispy corn tortillas adding purple onions cut into rings that have set for several hours in carbonated bottled lemonade, a little salt, sugar and white vinegar. We also add shredded lettuce and home made pico de gallo (Our favorite local chef told us that carbonated water takes the sulfur out of the purple onion ) The carbonated lemonade, btw, turns the purple onion an amazing pink. So by this smoked Boston Butt method we get great pork several ways. If there is any left over from bbq sandwiches, tacos etc we put it into a Brunswick stew.
