For those of you who want a non-traditional Corn Beef and Cabbage

  • I made my mothers recipe for Sweet and Sour Cabbage and served it with Corned Beef and Pierogis while we were in Florida Instead of with potatoes and carrots. My Family will not let me make any thing else with the corned beef now.
  • 1 large head red cabbage, shredded
  • 2 tart apples, grated
  • 1 cup sugar
  • 2 tbsp. butter or margarine
  • 1 cup vinegar
  • 1 tbsp. salt

In a deep pot bring vinegar to a boil, adding butter and salt. Add cabbage, cover, and simmer for about 1 1/2 hours. Add sugar and apples and simmer another 30 minutes.

 

Edit to add: I only use half of the sugar and it seems plenty sweet enough to me.
