PEAR BUTTER

Wash, peel, core and slice ripe pears. Put in a kettle with just enough water to keep them from sticking (don’t overdo the water ). Cook, stirring occasionally until soft.

Process the softened pears to make a puree. You can use a sieve, blender or food processer. Keep a little texture to the fruit.

To the puree add and stir:

8 cups puree
2 cups sugar (could use 1 ½ )
2 tsp. fresh orange zest
¼ cup orange juice
½ tsp. cardamom
¼ tsp. cinnamon
¼ tsp. ginger
¼ tsp. ground cloves

Cook over medium heat, simmering, until the butter mounds on a chilled spoon or until thick. Stir often to keep from sticking. It is also possible to cook in low oven of 300 until thick.

Ladle butter into hot, sterilized jars, leaving ¼ inch space at the top. Seal and process the jars in boiling hot water for 10 minutes.
