Put in a kettle with just enough water to keep them from sticking (don’t overdo the water ). Cook, stirring occasionally until soft.Process the softened pears to make a puree. You can use a sieve, blender or food processer. Keep a little texture to the fruit.To the puree add and stir:8 cups puree2 cups sugar (could use 1 ½ )2 tsp. fresh orange zest¼ cup orange juice½ tsp. cardamom¼ tsp. cinnamon ¼ tsp. ginger¼ tsp. ground clovesCook over medium heat, simmering, until the butter mounds on a chilled spoon or until thick. Stir often to keep from sticking. It is also possible to cook in low oven of 300 until thick. Ladle butter into hot, sterilized jars, leaving ¼ inch space at the top.
