Roasted cauliflower and chicken salad recipe

 

A delicious chicken and cauliflower salad with a creamy buttermilk dressing

Serves 4

1kg cauliflower, cut into large florets

12 sprigs tarragon

1 tbsp shredded lemon rind

12 cloves of garlic, unpeeled

2 tbsp vegetable oil

4 x 180g chicken breast fillets, trimmed

150g rocket leaves

 

For the lemon buttermilk dressing

180ml buttermilk

2 tbsp lemon juice

1 tsp finely grated lemon rind

¼ cup finely chopped flat-leaf parsley leaves
