How to make the perfect frittata

 

ASPARAGUS, NEW POTATO AND FRESH MOZZARELLA FRITTATA

small (1-inch diameter) new potatoes, scrubbed clean, quartered

bunch asparagus, tough ends trimmed

tablespoons olive oil

4

green onions, trimmed, chopped

1

tablespoon chopped fresh dill

large eggs

1/2

cup whole milk or half-and-half

1/2

teaspoon salt

1/4

teaspoon freshly ground pepper

1

cup diced (4 ounces total) fresh mozzarella or brick cheese

 

Chopped fresh dill, for garnish
