Grilled strawberries are deliciously easy

It’s strawberry season, and as we’ve come to expect, the supermarket strawberries are gigantic. That makes them good candidates for grilling; the bigger berries straddle the grill grate without sinking and hold their shape better than the wee ones.

Doused in balsamic vinegar, rolled in sugar and skewered, strawberries develop a more concentrated flavor when grilled. The heat caramelizes the natural sugars, enhancing the fruit’s sweetness. Balsamic vinegar adds a tangy touch.

It’s tempting to eat the berries straight off the skewer — keeping the stems on helps with that. But you can also serve them with roast pork tenderloin, grilled sliced angel food or pound cake, ice cream or Greek yogurt. The berries cook quickly, so don’t leave them unattended or you’ll have strawberry jam.

Come to think of it, that wouldn’t be a bad thing.

 

GRILLED STRAWBERRIES

 

1

pint strawberries, rinsed and patted dry

1/4

cup balsamic vinegar

1/2

cup sugar

 

Place berries in a pie plate and pour the vinegar over them, tossing to coat. Let sit for about 15 minutes, turning to coat all sides. One by one, roll strawberries in sugar to coat.

Place sugared strawberries on wax paper. Thread 3 or 4 sugared strawberries on skewers. On a medium-hot grill with a clean grill grate, grill for 2 to 4 minutes, turning once, until light grill marks appear and the strawberries begin to render their juice. Serve warm.

Makes 4 servings.

Strawberry Spinach Salad

 

3 cups fresh spinach Leaves

1 cup fresh strawberries, sliced

2 tbsp sunflower seeds

2 tbsp blanched slivered almonds

2 tbsp blue cheese, crumbled

1 tbsp unreconstituted cranberry juice

1 tbsp balsamic vinegar

3 tbsp oil and vinegar dressing, (any brand or make your own)

Method

 

In a large bowl toss together the spinach, strawberries, sunflower seeds, almonds and blue cheese. In a small bowl, whisk together remaining ingredients. Drizzle the dressing over the salad and toss.
