Draggingtree Posted March 16, 2014 Share Posted March 16, 2014 Country Chicken,Slow simmer chicken in a spice hardy tomato sauce. with smoked ham and epasote for a unique Mexican country taste. served with Mexican yellow rice also cooked in a crock pot. Time on High: 3.5 hours Time on Low: none Servings: 4 Prep time: 20 min Ingredients: one whole chicken5 coups of chopped tomatoes1 coup of smoked ham1 large onion2 jalapenos2 able spoons of house seasoning salt, onion powder & garlic powder4 sprigs of epasote (if not avail use terragon)2 tablespoons of tomato pastesalt to taste Directions: 1st step Season the chicken with the house seasoningand place in ceramic pot2ed step layered the ham, tomatoes jalapenos, epasote and tomato paste, on top of the chicken.sprinkle salt and any left over house seasoning over.3rd step place in the crock and cook on high for 2.5 hours.4th step after 2.5 hours uncover and layer the onions on top and cook for one more hour. http://www.crock-pot.com/stories?cgid=recipes&storyId=159341 Link to comment Share on other sites More sharing options...
