Salmon Noodle Bake

From Good Housekeeping

Makes 6 servings

 

1½ cups low-fat (1 percent) milk

1 large (1-pound) leek

10 ounces sliced mushrooms

1 tablespoon lower-sodium soy sauce

2 tablespoons plus 1 teaspoon olive oil

2 stalks (large) celery, finely chopped

2 teaspoons chopped fresh thyme leaves

3 tablespoons all-purpose flour

1 can (1¾ cups) lower-sodium chicken broth

8 ounces curly egg noodles

12 ounces skinless salmon fillet, cut into 1-inch chunks

1 cup frozen peas

Salt

Pepper

¹⁄3 cup panko (Japanese-style bread crumbs)

1 tablespoon chopped fresh flat-leaf parsley leaves, for garnish
