Chocolate Dipped Berries

--

1 qt fresh strawberries

4 oz semi-sweet chocolate

Chocolate berries with fresh, green stems. Rinse in cold water and pat dry with paper towel.

Melt chocolate in double-boiler over very hot water. Working quickly, pick up a berry by the stem and dip in chocolate, covering it about two-thirds. Remove excess chocolate; place on wax paper. Chill until chocolate sets. Store at room temperature.

 

 

Lettuce Strawberry Salad

--

romaine lettuce, washed and torn up

spinach , washed and torn up

2-3 green onions , sliced

1 cup sliced celery

sugar coated pecans

strawberries

dressing:

¼ cup milk

2 tsp. poppy seed

¾ cup mayonnaise

⅓ cup sugar

2 tsp. raspberry vinegar

 

Toss together onions, celery, pecans and strawberries. Toss into greens. Pour over dressing, just before serving.

 

 

No-bake Strawberry Pie

9" Pie

Filling:

2 #s frozen strawberries

2 tablespoons lemon juice

2 tablespoons water

2 packets unflavored gelatin

1 cup sugar

pinch salt

1 # fresh strawberries, hulled and sliced thin

2 tablespoons Sure-Jell for low sugar recipes

Topping:

4 oz cream cheese, softened

3 tablespoons sugar

½ teaspoon vanilla extract

1 cup heavy cream, chilled

 

Filling:

Cook frozen berries in a large saucepan over medium-low heat until berries begin to release juice, about 3 minutes. Add the Sure-Jell and increase heat to medium high and cook, stirring frequently, until thick and jamlike, about 25 minutes(mixture should measure 2 cups, cook until there is only 2 cups of berries.)

Combine lemon juice, water and gelatin in a small bowl. Let stand until gelatin is softened and mixture has thickened, about 5 minutes. Stir gelatin mixture, sugar and salt into cooked berry mixture and return to simmer, about 2 minutes. Transfer to bowl and cool to room temperature, about 30 minutes.

Fold fresh strawberries into filling. Spread evenly in pie shell and refrigerate until set, about four hours.

 

Topping:

With electric hand-held mixer on medium speed, beat cream cheese, sugar and vanilla until smooth, about 30 seconds. With mixer running, add cream and whip until stiff peaks form, about 2 minutes. Serve pie with topping on top or on the side.

 

 

Peppered Strawberries

--

1 cup strawberries, halved

2 tsp sugar

1 tsp anisette

1 ½ tsp Grand Marnier

⅓ cup heavy cream

vanilla ice cream

Place strawberries in serving bowl. Add lots and lots of fresh ground pepper from a pepper mill. Add remaining ingredients in order, except for ice cream. Mix lightly. spoon over individual dishes of ice cream . This is a delightful dessert .

 

 

Strawberry Bread

--

3 cups flour

2 cups sugar

1 pint fresh strawberries, halved if small, chop if large

1 tsp baking soda

1 tsp baking powder

1 tsp salt

1 tsp cinnamon

1 ¼ cups vegetable oil

4 eggs , beaten

1 cup chopped pecans, optional

 

 

Heat oven to 350. Combine flour, sugar, strawberries, baking soda, baking powder, cinnamon, and salt in a large bowl. Make a deep well in the center of the flour mixture. Add oil and eggs to center of well. Mix till combined then stir in pecans. Pour into two greased 8 1/2 x 4 1/2 x 2 1/2 loaf pans. Bake until golden and inserted testers come out dry, approximately 1 hour 5 minutes. Cool on wire rack 30 minutes and remove from pan.

 

 

Simple Strawberry Sauce

--

2 pints strawberries, washed and sliced

½ cup sugar(to taste)

 

Combine sugar and berries, stir gently; chill one to two hours or overnight. Use sauce on ice cream, shortcake, angel food cake, pound cake, puddings, waffles, crepes, or just enjoy with with a touch of cream.

 

 

Strawberry Cream Freeze

--

1 pkg(8oz) cream cheese, softened

1 cup cold milk

1 pkg(3.4 oz) vanilla flavor instant pudding

1 ½ cups cool whip, thawed

20 vanilla wafers, coarsely broken

3 cups fresh strawberries, sliced, divided

½ cup strawberry ice cream topping

1 (6 oz) Oreo pie crust

 

 

Beat cream cheese to large bowl with mixer until creamy. Gradually beat in milk. Add dry pudding mix; beat 2 min. Stir in Cool Whip, wafers and 1 cup berries. Swirl in ice cream topping. Spread into crust. Freeze 6 hours or until firm. Remove dessert from freezer 15 min. before serving. Garnish with remaining berries.

 

 

 

Strawberry Salad

12 servings

2 bags spinach , tear into bite-size pieces

2 to 3 pints strawberries, rinsed and sliced

2 boxes fresh mushrooms, sliced

 

Dressing:

⅔ cup sugar

2 tbsp sesame seeds

2 tbsp poppy seed

3 tbsp minced onion

½ tsp paprika

½ tsp worcestershire sauce

1 cup vegetable oil

½ cup white cider vinegar

 

In a large bowl combine salad ingredients. Combine all dressing ingredients in a large jar and refrigerate. Shake and toss with dressing just before serving.

 

 

Strawberry Spring Salad

--

1 10 oz bag fresh spinach

3 cups fresh strawberries, washed and hulled

1 can(11 oz) mandarin oranges, drained

¾ cup walnut pieces

1 head Bibb lettuce or 1/2 head of Boston lettuce

1 medium sweet onion, sliced thin

 

Wash spinach and lettuce, pat dry. ear into bite-sized pieces and place in a salad bowl. Reserve six to eight whole strawberries for garnish; cut remaining berries in half and add to bowl. Add drained oranges and sliced onion. Toss gently; cover with plastic wrap; refrigerate until serving time. Add salad dressing of choice, a poppy seed dressing is an excellent choice. Garnish with whole strawberries and walnuts.

Note: To make this recipe into an entree, add sliced, cooked chicken breast or sliced beef tenderloin.

 

 

 

The Ultimate Strawberry Pie

--

crust:

1 ½ cups flour

½ tsp. salt

2 tbsp. sugar

½ cup vegetable oil

2 tbsp. cold milk

 

 

filling:

12 oz(1 1/2 Pkgs) cream cheese, softened

4 tbsp. sugar

1 quart strawberries, divided

2 oz semi sweet chocolate, melted

1 tbsp. pistachios, pecans & walnuts, finely chopped

 

Combine all crust ingredients in a 9" pie plate; mix and press into bottom and sides of plate. Do not prick. Bake at 400 for 12-15 minutes until golden brown. Cool. Beat together cream cheese and sugar with mixer until smooth. Add about 3/4 cup of the strawberries; beat until just bits of strawberries remain. Spread mixture into cooled pie shell. Melt chocolate over low heat; dip tips of remaining strawberries into chocolate. Arrange tips up over cream cheese layer. Sprinkle with nuts for garnish. Chill thoroughly. Cut with sharp knife.
